Emma’s Pizza

Yeast, flour, water, and immense creativity. That is what you can expect from a place that prepares its own dough and toppings (well some of it at least). It has been a while since I ate at Emma’s, but boy do I miss the crust. A great pizza, in my opinion, is one where the dough is just right. Flavorful, not stale, thin but with a certain amount of pliability, slightly charred at the bottom, holds it shape against its toppings. I know, some people go for thick NY style dough, some prefer a cracker-like consistency, but what Emma serves is just right for me. I don’t remember if the pizza was exuding a doughy yeasty aroma, so I’ll be sure to update here the next time I try it.

As for the toppings, it’s all about balance. They are relatively generous while keeping the integrity of the pizza in check. I don’t recall the flavors I have tried since these photos were taken 3-4 months ago, but I definitely like the ones with a fair amount of cheese, herbs, sundried tomato and a couple meat. Sure, pizza loaded with meat sounds like the perfect american dream, but should you decide that you would like to go up a notch in the pizza world, why not start at Emma’s. A classic Magherita should be more than enough to keep you satisfied.
