Nothing like a simple shio tonkotsu ramen (Tonkotsu Soba) to warm the cockles of my heart. The broth has a very clean porky flavor and full of umami without being too salty. It also has a rich mouthfeel, yet not overwhelming.
My biggest complaint though is that the char siu is thin and dry. The premium upgrade isn’t good either. Do yourself a favor and order the Aburi Niku as a topping instead. Between 0-10 where 10 is melt-in-your-mouth, the Niku is between 6-7 on the tender scale.
Note that Funan has 2 ramen stalls (Tsuta and Shoryu) that sell great tonkotsu ramen for less than $10 (and they both rival ippudo). Shoryu does have a slight edge when it comes to toppings.
