They have been around for the longest time. I remember watching the skin being made fresh and wondering how they got the dough consistency and pan temperature just right. My attempts at home ended up with a warm dough that was too fluid to hold after the first two skins.

Anyway, skin aside, the popiah wasn’t great. It was quite poorly wrapped i.e. the popiah fell apart and the fillings spilled out even with the lightest of touch. I believe the lettuce added too much air so while it may feel tight initially, once the chopstick picks it up, the lettuce shreds crumbles under the pressure end everything falls apart.

Oh well..
