Good but pricey Wagyu yakiniku. It does take a few trial and error to get the beef cooked to the correct doneness and signature tenderness. The cooking time also varies between cuts. Usually, I like to err on the side of undercooking beef in general, but in this case, the wagyu needs to be cooked adequately for the fat to be properly rendered.
Great cuts include the tongue, chateaubriand, rosu and karubi. The tokumori (marinated off cuts) platter taste surprisingly like Kalbi, i.e. if cooked long enough, you get the char from the coal and the smokiness from the fat hitting the coal. Be warned, if cooked anything less than medium-well, the meat can taste quite tough…
